Bacon Oreo Cookies

Have you ever looked at an Oreo cookie and thought to yourself “Man, I wish this were more delicious!” No? Me neither. But just because an issue is imaginary won’t stop the dedicated bacon artists of this site from solving it. How, you ask? You must be new here. We’re going to make it baconier. Try to contain your excitement. We’re making Bacon Oreo Cookies.

Before you begin, you’ll need to make the following:


For Cookies

  • 1 1/3 cups cocoa powder
  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1 cup leftover candied bacon grease
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Electric hand mixer
  • Parchment paper
  • Baking sheets
  • Wire racks

For Filling

  • 1/2 cup (or one stick) unsalted, room-temperature butter
  • 1/2 cup shortening
  • 3 cups sifted confectioner’s sugar
  • 1 1/2 teaspoons vanilla extract

Now to begin.

For the Cookies

  1. Sift cocoa powder, salt, and flour into a large bowl.
  2. Using the mixer, thoroughly mix the grease and sugar. Add the eggs one at a time while continuing mixing, then the vanilla. Add the dry ingredients and mix thoroughly, incorporating each ingredient.
  3. Lightly flower two pieces of parchment paper. Split the dough into two halves and put one half in-between the parchment paper. Roll into a 1/4 inch thick rectangle. Repeat with other half of dough. Refrigerate both rectangles, still covered by parchment, for at least one hour, or up to several days.
  4. Using a 2 inch round cookie cutter, cut the dough into about 60 circles. Arrange the cookies about 2 inches apart on ungreased baking sheets, and chill for 20 min. Preheat the oven to 325 degrees.
  5. Bake the cookies for about 20 min, or until they’re just slightly darker around the edges than the middle. Cool on wire racks.

For the Filling

  1. Using an electric mixer, cream the butter and shortening until fluffy. Beat in the confectioner’s sugar and vanilla. Add as much candied bacon bits as you want. The more the better! I personally prefer about a cup of bacon bits.
  2. Flip half of the cookies upside down and top with a level tablespoon of filling. Enjoy ravenously. Do not share.

Easy Mode: Buy Oreo cookies. Carefully open the cookies with a butter knife and scrape out the filling. Place the filling into a bowl. Add a small amount of candied bacon grease for easier mixing. Add 1 teaspoon (or more, no one would blame you) of candied bacon bits for each Oreo cookie. Spoon the improved filling back onto Oreo cookies, and enjoy. Still do not share.
