Not your grandma's meatloaf

Bacon Cheeseburger Meatloaf

Nope, it’s not your grandma’s meatloaf at all. It’s way better. Do you know why? Of course you do, it’s because of the bacon. It’s always because of the bacon. This Bacon Cheeseburger Meatloaf is sure to surprise everyone it’s served to (although sharing with others is not recommended)

  • 1 lb ground chuck
  • 8-12 strips smoked bacon
  • 8 oz sharp cheddar cheese, grated
  • 2 large eggs, lightly beaten
  • 1/4 cup toasted bread crumbs
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup ketchup
  • 2 tablespoons steak sauce
  • 2 bowls
  • Casserole dish
  • Tin foil

  1. Preheat oven to 350 °F.
  2. Combine all ingredients but steak sauce and ketchup in large bowl, mixing well. If mixing with hands, wash them well before continuing.
  3. In small bowl, combine ketchup and steak sauce. Stir 1/4 of the mixture into meat.
  4. Line casserole dish with tin or aluminum foil.
  5. Press meat into loaf shape in casserole dish, layer with bacon and cover with remaining sauce.
  6. Bake 50-60 min, or until meat is no longer pink.
  7. Eat until bursting, wait a few minutes, then eat more. Do not share.

For a leaner, less greasy meatloaf (for whatever reason you’d want that), line bottom of casserole dish with slices of white bread. This will absorb some of the grease while baking.
