Bacon Wrapped Jalapeno Poppers

High up in the Himalayas, guarded by fire-breathing manticores and only accessible by jetpack, their exists a magical bar of ultimate awesomeness. Beer flows from the drinking fountains, waitresses tip *you* for eating there, your favorite sports team always wins, and the Bacon Wrapped Jalapeno Poppers are a complimentary snack of such untamed deliciousness that your head explodes after a single bite. Ok, all of that was a lie. They’re really tasty, though.


  • 2 packages cream cheese, room temperature
  • 4 cloves chopped garlic
  • 1/4 cup finely chopped sun-dried tomatoes
  • Chopped fresh basil leaves
  • Salt
  • 20 jalapeno peppers
  • 1/2 to 1 pound thinly sliced bacon
  • Toothpicks soaked in water


  1. Preheat the grill.
  2. Mix cream cheese with chopped garlic, sun-dried tomatoes, a dash of chopped basil, and a pinch of salt. Mix until mixture is soft and manageable.
  3. Slice a hole around the stem of each jalapeno, remove the stem, and scoop out the seeds.
  4. Use a spoon or a pastry bag to fill each jalapeno with cream cheese mixture. Resist the temptation to overfill.
  5. Wrap each pepper with 1 or 2 or 20 strips of bacon. Secure the bacon with a toothpick so that the end of the bacon covers the opening into the jalapeno.
  6. Grill until the bacon is crispy.
  7. Allow just a minute to cool, then remove toothpicks.
  8. Inhale like they were the last bacon slices on Earth. Especially in that scenario, do not share.

Alternative: you can broil the jalapenos if you don’t feel like grilling. Just broil for about 5 minutes, or until bacon is crispy.
