Delicious Half-time Potato Skins

Getting ready for the big game? If you’re having a party, a family get together, or you’re just in the mood for an awesome snack featuring bits of bacon (we understand), then these delicious half-time potato skins are just right for you! With just under 30 minutes of prep and cook time, you’re ready to put smiles on your guests’ faces (or just your own).


  • 6 baking potatoes, baked or microwaved
  • Non-Stick Cooking Spray (Crisco original works well)
  • 2 cups shredded Cheddar cheese
  • Sour cream
  • 9 strips bacon, cooked and crumbled
  • 3 to 4 green onions, thinly sliced
  • Some extra bacon to munch on while you cook these (always a good idea)


  1. Heat oven to 375°F
  2. Cut baked potatoes in half lengthwise.
  3. Scoop out centers, leaving ¼-inch thick shells (reserve centers for another use).
  4. Place shells, cut side up, on a baking sheet. Spray with no-stick cooking spray
  5. Bake 20 minutes or until edges are golden brown and crisp. Divide cheese evenly between potatoes.
  6. Broil until cheese is bubbly and melted, about 2 minutes.
  7. Top each potato shell with a dollop of sour cream, bacon bits, and green onion slices.
  8. Eat with a smile in front of hungry friends. Do Not Share.
